Dmesg previously saved log files in text form. Why journald saves in binary form? It's something to do with the fact that the binary file when hacking is Harder to fake?

This is because earlier programs were written for people, and people read the output of programs. Now, programs written for other programs, and people no longer need.

Because of systemd. There are many good and free distributive. There are also people who would like to earn some money. And they set up systemd is something that sort of replaces init, but the logs writes in binary format, in order to require a paid service consultation - what is it and with what it eat...
The idea is to "complicate Linux to be able to sell consultations" commercial was so good that now find distrib without this monstrosity is not trivial task...
