How to put a default script to open a file in Ubuntu 18.04 on the GUI Gnome?

you can simply create a shortcut to the application where amongst other Exec variable to specify the path to your script, then add 'shortcut' to the correct folder(/usr/share/applications or /usr/local/share/applications, or for the current user ~/.local/share/applications)
Then this shortcut be added to the selection of programs to run
